As the mother of an active toddler, I could never figure out why, even with all the running, ice skating, swimming, bicycling, and dodge-ball I was doing, I still was lethargic, exhausted and overweight. That’s when I decided it was time to eliminate things like white flour, white rice, refined sugar, gluten and wheat from my diet, along with all the GMO ingredients like corn, soy and dairy. And suddenly, like a MIRACLE, I lost 30 pounds and felt healthier and more energetic than ever! But as healthy and happy as I now was, I still missed the occasional indulgence, like my favorite goody, a chocolate chip cookie. I decided there had to be a way to create a cookie that was free of all the “bad” stuff but still tasted great. Then I realized that so many of my daughter’s friends had food allergies, and they were also longing for a delicious treat. With that added motivation, I created a recipe that my family, friends and I think is DELICIOUS, and the "Willow’s Wonders"™ cookie was born!
